Creamy Goat Cheese Mashed Potatoes (dairy, soy, nut, gluten, allium free)

  • 8 large potatoes

  • ¼ cup olive oil

  • ⅓ cup dairy free heavy whipping cream

  • 1 log plain (or seasoned) goat cheese (optional if not tolerated)

  • 1 tsp sea salt + salt for potato water

  • ½ tsp white pepper


Peel the potatoes, cube them, and place them in a large pot. Cover potatoes with water, salt the water, and boil them until they are fork tender. Drain the potatoes into a colander, set aside. In the cooking pot, whisk olive oil and dairy free whipping cream together, and heat until you can whisk the goat cheese in to melt. Season with salt and pepper, and add the potatoes back to the pan. Mash or rice the potatoes, or whip them with a hand mixer, incorporating the cheese sauce into the potatoes thoroughly before serving.
