  •  3 ripe but firm pears or apples, halved and cored

  • 1 log plain or honey goat cheese

  • 1/4 cup honey

  • 1 tablespoon olive oil

  • 1/4 teaspoon ground cinnamon

  • 1/4 teaspoon ground ginger

  • 1/4 teaspoon ground cardamom

  • dash sea salt

Preheat your oven to 375°F. Halve the apples or pears and scoop out the cores to create a small well in each half. Place the pears or apples cut-side up in a baking dish. Use an oil spritz bottle to spray the top of the fruit halves with a thin, even layer of olive oil, or dip the top of the fruit halves into a shallow pool of olive oil on a plate before placing in the baking pan.

In a small bowl, use a fork or hand mixer to mix the cinnamon, ginger, cardamom, and salt into the goat cheese. Divide the spiced, whipped cheese evenly in six portions, and use the cheese to fill the wells in the pears.

Bake for 15-20 minutes, until the fruits soften. Remove from the oven, and drizzle with honey. Serve hot.
